Description

A blend of Chardonnay and Pinot Noir with a small quantity of red wine made in Champagne.This rosé champagne is vinous and supple and exudes aromas of plum, violet and peony with that lovely smell of brioche. The colour is an intense pink, criss-crossed by threads of fine bubbles. The complex and delicate nose is reminiscent of the acid drops sweets you enjoyed as a child. The palate is well balanced and dominated by red fruits.

Origin : A.O.C. Champagne : Hand Picking.

Grape varieties : 70% Chardonnay, 25% Pinot Noir and a small quantity of red wine from Champagne. Yield per hectare : 10 000 kg/ha.

Terroir : Chalky slopes overlayed with clay and limestone. Average age of the vineyard :35 years.

Vinification : Selection from a large palette of different crus, using exclusively the « cuvée » the first juice of grapes. Fermentation in temperature controlled stainless stell vats. The blending incorporates a small quantity of red wine from Champagne. Fermentation in temperature controlled stainless steel vats. No malolactic fermentation. Wines are stabilised using cold temperature and lightly filtered, before being bottled and aged "on lattes" for approximately 36 months. Traditional manual disgorging.

Pairing : Perfect with white meats and desserts containing little sugar, such as red fruit gra tin, but also ideal as an aperitif.
