Description

"Ultima" The last one ? Perhaps. In any event this is the name of one of our special cuvées. A special name for a special champagne aged in oak to lend a suggestion of woodiness whilst not in any way masking the fruit. With a lively attack and a long finish Ultima will appeal to lovers of more mature champagnes and several commentators see it as the perfect wine for an intimate dinner à deux. Appreciated for its golden colour, its aromas of dried fruit and cherries as well as for its delicate structure on the palate. Your first taste is certain not to be your last.

Origin : A.O.C. Champagne : Hand Picking.

Grape varieties : 50% Pinot Noir, 50% Chardonnay. Yield per hectare : 13 000 kg/ha.

Terroir : Chalky sopes overlayed with clay and limestone. Average age of the vineyard :35 years. 

Total acidity : 6,5 g/l

Total sugars & PH : 8 g/l & 3,14

Finished alc. : 12 %

Vinification : Produced only in exceptional years with the best ageing potential., using exclusively the « cuvée » the first juice of grapes. Fermentation in temperature controlled stainless steel vats. No malolactic fermentation. 50 % of basic wines are aged with the oak barrel. After blending, wines are stabilised using cold temperature and lightly filtered, before being bottled and aged "on lattes" 36 months.Traditional manual disgorging. 

Pairing : Champagne ideal as an aperitif and emphasize a white meat in sauce.
